Pineapple Blackberry Mocktail Fizz
Pineapple and blackberries are paired with frozen Tetley Care Lemon Ginger Tea ice cubes for a sophisticated and refreshing sparkling tropical beverage.

Ingredients
- 6 Care Lemon Ginger tea bags
- 6 cups (1.5 L) water
- 4 springs fresh thyme, torn into small pieces
- 1 1/2 cups (325 mL) fresh blackberries, divided
- 1/4 cup (60 mL) fresh lime juice
- 4 sugar cubes
- 2 cups (500 mL) pineapple juice, chilled
- 2 cups (500 mL) sparking water, chilled
- 4 pineapple wedges for garnish
Directions
- In medium saucepan, heat water for 6 to 8 minutes or until boiling. Remove from heat and add tea bags. Let steep for 10 minutes or until well flavored.
- Pour steeped tea into ice cube molds, sprinkle with thyme and freeze for 4 hours or until frozen.
- In 4 tall glasses, pour into each ¼ cup blackberries, 1 tbsp lime juice, and 1 sugar cube and muddle together.
- Divide frozen tea cubes evenly between glasses. Add 1/2 cup pineapple juice into each glass and stir. Top each with sparkling water, garnish with pineapple wedge, and remaining blackberries.
Tips
- Substitute blackberries with your favorite berry like blueberries, raspberries, or strawberries if desired.
